It’s hot in most of the country right now. Like the can’t fall asleep without the fan on, windows open, no covers, no clothes kind of hot nights. Monterey, California, where I currently live, has pretty invariable weather, ranging from overcast to blue skies and temperatures between 60-75 degrees. It’s chronic running weather! However, last Sunday started with 5am thunderstorms proceeded by heavy humidity and hot showers. The rain stopped but the heat proceeded through Monday. I loved it! I’ve missed hotter summer weather. But, by Tuesday it had passed, womp womp. I promised R cauliflower crust pizza Sunday night after winning his second amateur golf tournament in two weeks! It had been a while since I whipped up this low-carb, gluten-free, vegan pizza and he requested it a week earlier. Had I been used to dealing with hotter weather I may have postponed the meal until the heatwave passed. Worst night ever to turn on the oven! It took hours to cool off our apartment after dinner. It turned out amazing, so I guess it was worth it!
When I decided to prepare snacks for the week Monday afternoon, I knew turning on the oven was out of the question. Most of you probably avoid it from June until August (unless you’re blessed with air conditioning). Let me just say, I came up with not only the most delicious snack, but one that requires no cooking, minimal cleaning, and can be taken with you on the go! These No Bake Double Chocolate Peanut Butter Protein Energy Bites have a very long name but a very short and all-natural ingredient list. These gluten-free and grain-free nuggets will satisfy major chocolate cravings.
I mean, who doesn’t love peanut butter with chocolate, the satisfying texture of fresh cookie dough, or the crunch of chocolate chips? I will judge you if you don’t. 😉
Healthy No Bake Double Chocolate Peanut Butter Protein Energy Balls
Makes 15 balls
1 cup almond meal flour
½ cup peanut butter or almond butter
¼ cup maple syrup (can substitute stevia for a sugar-free recipe, just add extra banana and a little almond milk to moisten the batter)
½ ripe, mashed banana
2 scoops all-natural chocolate protein powder
¼ cup chocolate chips (optional)
- Combine almond meal flour and protein powder in a large mixing bowl.
- Combine nut butter, maple syrup, and mashed banana in a separate bowl until smooth.
- Add wet mixture to the dry, slowly incorporating it in until you have the consistency of cookie dough. You can add a little coconut oil or unsweetened almond milk if the consistency is still dry. Add in chocolate chips, if desired.
- Cool dough in the freezer or refrigerator for 10-20 minutes.
- Using a spoon, scoop out dough into your palms and roll into a ball. This recipe should make 15 small/medium balls.
- Enjoy! Keep in the refrigerator until you’re ready to munch on them.
