You’ve all been doing so well on your healthy fitness journeys! However, Halloween is just not Halloween without tricks AND treats! Sadly, a lot of store bought candy is filled with nasty artificial ingredients and preservatives. Yuck! Don’t worry, I have a solution! I’ve come up with a recipe that tastes better than the store bought junk and fits perfectly in with your healthy lifestyle.
My all-time favorite Halloween candy was Reese’s Peanut Butter Cups. There’s something about the combination of salty, creamy peanut butter and rich chocolate that is impossible to resist. It was only natural to let my childhood palette inspire this gluten-free, low-sugar, vegan recipe! Instead of peanut butter, I opted for crunchy almond butter. I love the texture the bits of nuts added to the candy. Feel free to sub in whatever nut butter you like! I also upgraded the super sugary milk chocolate coating for antioxidant rich dark chocolate (which I have always preferred to milk chocolate actually!).
Okay, time to dig in!
Dark Chocolate Covered Almond Butter Bites
Ingredients
Filling
1/2 cup all-natural, organic crunchy Almond Butter, or whichever nut butter you prefer (I love the Trader Joe’s brand crunchy almond butter or Laura Scudder’s brand crunchy peanut butter!)
1 tbsp almond or peanut flour
1 tbsp quinoa or coconut flour
1 tbsp unsweetened almond milk
1 tsp cinnamon
1/2 tbsp vanilla extract
1/2 tbsp 100% pure maple syrup or Stevia to taste
Coating
1/2 cup dairy-free dark chocolate chips (I used Enjoy Life brand)
Preparation
1. Combine all the filling ingredients in a bowl until smooth.
2. Roll the mixture into 10-12 little balls.
4. Melt chocolate chips in the microwave, stirring occasionally.
5. Roll the balls into the melted chocolate. Place on a piece of parchment paper or tin foil onto of a hard surface like a plate, baking sheet, or tupperware. Put in the freezer for at least 1 hour.
6. Put on your Halloween costume, say “trick or treat!” and enjoy! Store in refrigerator or freezer.
