Banana Bread Protein Waffles

Who doesn’t love waking up to the smell of waffles? I’m so excited to make them tomorrow morning, I can’t even sleep. I’m not kidding. It’s Friday night around 1am and I decided to write this blog post because the thought of waking up to make  (and eat) these crispy, doughy Banana Bread Protein Waffles is literally keeping me awake. Okay, so it’s not just the waffles keeping me awake. But they are playing a major role.

There are certain weeks where creating content feels taxing and my creative juices aren’t flowing. Writing, taking photos, editing, and promoting Life in Spandex feels like a chore. However monotonous it feels in those moments, I just keep searching, thinking, and playing with new ideas. I listen to your feedback on this blog, Instagram, Facebook, and Twitter. Then, when I least expect it, a wave of inspiration and motivation hits. Tonight is one of those nights.

I’ve had a very busy and exhausting week at work leaving little space for after hour creativity. Long story short, I wasn’t sure what I was going to post today. Then I remembered. A couple years ago I religiously ate protein waffles every morning. I couldn’t help myself. It was all I wanted. I’m a creature of habit, so when I find something I like, I tend to stick with it. Yes, for convenience and ease, but also because I literally crave the same food over and over. Until I don’t. And then I move on to the next obsession. Well, I decided it’s time for the return of the protein waffle!

Protein waffles are one of my favorite breakfasts. They take minimal effort to make, can be prepped ahead of time, are portable, full of satiating protein, and taste delish. I love how this recipe stays doughy on the inside and gets crispy on the outside. My food has to have texture and these don’t disappoint. It’s also been cold here in California. A brisk 50 degrees and us west coasters are pulling out our winter coats, scarves, and warm beverages. I feel silly for saying that when I scroll through Instagram and see East Coast runners celebrating the same weather in shorts. However, this Cali cold calls for some comfort food and what’s better than sweet, dense banana bread with coffee? These Banana Bread Protein Waffles, that’s what!

Banana Bread Protein Waffles 


Makes 1 big waffle

Regular Recipe

2/3 scoop vanilla vegan protein (I use a pea and brown rice blend from True Nutrition)

1/2 cup egg whites (or 2 flax eggs for a vegan version)

1/2 mashed banana

1 tsp cinnamon

Pinch of Pink Himalayan Sea Salt

1 tsp vanilla extract


Paleo Recipe

2 tbsp coconut flour

1 tbsp almond flour

1/2 cup egg whites (or 2 flax eggs for a vegan version)

1/2-3/4 mashed banana

1 tsp cinnamon

Pinch of Pink Himalayan Sea Salt

1 tsp vanilla extract


1. Preheat a waffle iron on medium/high heat.

2. Mix all ingredients together in a bowl until fully combined.

3. Spray waffle maker with coconut oil cooking spray.

4. Pour batter into waffle maker. Close and cook until fully cooked through and edges are crispy.

5. For an extra crispy outside, put in the toaster for 1 to 2 minutes or until more golden brown.

6. Top with your favorite toppings and dig in! I love almond or peanut butter, coconut shavings, sliced almonds, berries, more banana, Greek, almond, or coconut yogurt and/or a drizzle of 100% pure maple syrup.
